The term ‘cocktail’ first popped up in print in 1806, in a New York newspaper, where it was defined as a ‘stimulating liquor composed of spirits of any kind, sugar, water and bitters,’ which is basically an Old Fashioned! However, it’s believed that cocktails date back to the 17th century when people were mixing spirits with sugar, spices and other flavourings to make them more tasty. Fast forward to the 19th century, and cocktails were all the rage in the UK and US. Bartenders became celebrities in their own right, creating iconic drinks like the Mint Julep and the Martini.

By the late 1800s, cocktail bars began popping up in London, inspired by the American bartending craze. The Savoy Hotel, which opened in 1889, became a cocktail mecca with bartenders like the legendary Harry Craddock leading the way. Craddock's ‘The Savoy Cocktail Book,’ published in 1930, is still a bible for bartenders worldwide, featuring iconic recipes like the Corpse Reviver and the White Lady. In the US, prohibition in the 1920s should have killed the cocktail, but it did the opposite. Speakeasies thrived and bartenders had to get creative with whatever they could get their hands on. This era brought us some of the most famous cocktails, like the Sidecar and the Bee's Knees.
